Cheating the big red firewall!

2 days in Beijing now.  Food is as good as last time, traffic as bad. The workshop with ISTIC was amazingly good, many enthusiastic graduate and post graduate students who participated in the discussion.  I am excited for Berlin8 next week.

I visited today the Olympic village and the new center of CCTV, then later Opera in the new Beijing Opera house. Woww, finally great ideas and great architecture.   Neverthelesse I must admit,  I like most Guangzhou, Shanghai is too chic, and Beijing is too capital, but anyway.

Rotisserie Weingruen

Da auch mein zweiter Anlauf, im alten Zollhaus essen zu gehen, scheiterte (es war ausgebucht auch schone eine Woche vorher), akzeptierte ich den Vorschlag vom Zollhaus in ihrem "Schwesterrestaurant"  Rotisserie Weingruen zu buchen.

Ceci, Sesame and Tuna

  • drain the chickpeas and the tuna
  • mix chickpeas and tuna in a bowl
  • mash some salte soybeans with hot bean paste
  • crash some peanuts
  • wash the salted capers
  • mix everything in the bowl with some tahini or sesame oil
  • you may add parsil if you have

Rice Noodes with Squids

  • soak dried tomatoes
  • slice squids into very thin rings
  • slice onions and dried tomatos
  • fry onions and tomatos in a wok  until done with low temperature
  • add the capers and control salt
  • boil the rice noodles
  • increase heat in the wok and fry the squids for some minutes, so that they just change colour
  • add the cooked noodles to to wok an stir

Neugruens Koeche

I have been twice for dinner at Neugruen's.  November 2009 and August 2010,  In both opportunities I was happy about the 60  Euros spent for eating and drinking.  They also decreased prices from 2009 to 2010.  In 2009 the set menu was 44 Euro, in 2010 it decreased to  39 Euro without influence on quality and quantity.  On August 14 Cecilia and I shared both menus.

With aperitivo and a bottle wine the bill was 120 Euro.

Pollo Ripieno in AgroDolce

  • steam the chicken liver until it is just cooked, less is better than too much
  • chop the chicken liver into bigger pieces
  • soak the sultanas in wine, shery or Xiao Shing
  • soak the dried tomatoes in wine, sherry or Xiao Shing, chop them into small pieces
  • crumble the walnuts
  • mix chicken liver, sultanas, dried tomatos, eggs, walnuts, bread crumbs and lemon cest
  • fill the chicken with the mass  and close it by sewing
  • prepare a broth from celery, onions, dried tomatos, carots parsley, mirto or sage and mint
  • cook the chicken in

Moscardini con Peperoni

Ingredienti Per i moscardini 4000 g di moscardini puliti, 5 scalogn1, 5 peperone giallo, 5 peperone rosso, poco grappa 10 dl di vino bianco secco, Per la polenta 200 g farina di mais bianca, poca buccia di limone, 2 tuorli d’uovo, poco pan grattato, basilico q.b., olio extravergine di oliva. Procedimento. Polenta Andremo a cuocere una polenta abbastanza densa che alla fine verrà aromatizzata con poca buccia di limone e una noce di burro. Stenderla, raffreddarla e quindi tagliarla a fette dello spessore di 1 cm e successivamente in triangoli.
